Super Protein Cereal

Serves 2

¼ C Pumpkin Seeds
¼ C Sunflower Seeds
¼ C Sesame Seeds
¼ C Hulled Buckwheat Groats
2 C Apple Juice
1 C Almond Milk
1/8 t Cinnamon
¼ t Vanilla
½ Apple, minced

Rinse seeds and grain well. Soak pumpkin, sunflower, and sesame seeds and buckwheat groats in apple juice for 8 hours.

Stir cinnamon and vanilla into Almond Milk.

Drain half of the apple juice from the seed mixture. Save it for use in another recipe (for example, part of the liquid in a cookie recipe).

Place seeds and grains in a bowl with minced apple. Add the Almond Milk and enjoy!
