Tomato Bisque Soup

3 Tomatoes, medium and ripe
1/8 C Sun-dried Tomatoes, rehydrated
½ C Creamy Cheesy Pimento Dip
¼ Onion, medium
1 Garlic Clove, medium
1 T Fresh Lemon Juice
4 Dried Apricots, rehydrated
¼ C Cashews, soaked
½ t Dulse, minced
½ t Fresh Thyme, minced
4 Fresh Basil Leaves, minced
½ t Fresh Rosemary, minced
¼ t White Pepper

Food Processor Method

  • Rehydrate the sun-dried tomatoes and dried apricots, separately.
  • Chop the ripe tomatoes and put into a VitaMix. Blend for 10-15 seconds.
  • Add the sun-dried tomatoes and blend again.
  • Add the onion, garlic, dulse and herbs. Blend again.
  • Add the fresh lemon juice and creamy cheesy pimento spread and blend until smooth.
  • Add the rehydrated apricots and blend until smooth.
  • Adjust to taste.
